Several come from the excellent online resources of the University of Chicago's Digital Dictionaries of South Asia (DSAL) website.
A Practical Hindi-English Dictionary by Mahendra Chaturvedi
Hindi Shabdasagara by Shyamsundar Das NB: Hindi to Hindi dictionary
Learners' Hindi-English Dictionary by Hardev Bahri
Shabdmala at Hinkhoj.com. Not a proper dictionary as such, but I find they often have slang that is harder to find elsewhere. NB: They have an app!
Books:
Chambers English-Hindi Dictionary *I've never used it, but been told it's good
Oxford Hindi-English Dictionary *quite exhaustive
Teach Yourself Hindi Dictionary *somewhat small, for neophytes, but useful

A Dictionary, Hindustani and English by John Shakespear
A New Hindustani-English Dictionary by S.W. Fallon
A Dictionary of Urdu, classical Hindi, and English by John T. Platts
These two are not proper dictionaries, but I often find stuff on them that I can't find elsewhere:

Firoz-ul-Lughat (also available here)
Platt's Urdu Dictionary *I find this easier to use in paper form than online. Somewhat antiquated, doesn't always contain modern terminology
Standard Twenty First Century Urdu-English Dictionary *Excellent for modern vocabulary though somewhat small
