I taught my daughter and her boyfriend to make chai today and they asked me to send ingredients / instructions and thought some of you might like it.
Either mamri / CTC fine Assam tea or Assam tea leaves. CTC steeps for 2-3 minutes and tea leaves - 4-5 minutes, depending on instructions on the package. Do not put any fine cut teas in Teavana steeper since it clogs it up. - 1 teaspoon for each cup.
Sugar - 2+ teaspoons per serving depending on taste.
water - 1 14 cup per serving.
Milk - as much as you want - 2% milk or whole milk - 1/4 cup per serving is what I do for my chai.
2-4 small pieces of stick cinnimon 1 cardamom pod per serving 2 cloves per serving
Crush all three above.
Nutmeg Allspice Anise seed (or star anise - I prefer star anise and, if available, break one part of star and crush with cinnamon, etc.) Ginger
Add a very small amount of the first three and about 2-3x more ginger than the others, depending on taste.
Combine tea, sugar and all spices and add to boiling water.
Stir a few seconds and then add milk, reduce temp from 10 to 9, stir until boiling, cover and remove from heat. Steep depending on type of tea mentioned above.
Strain and serve.
